Fruit tea shops are booming across Southeast Asia. Walk through any shopping district in Bangkok, Kuala Lumpur, or Ho Chi Minh City and you’ll find them — and increasingly, you’ll find an intelligent tea brewer behind the counter. The segment grew roughly 30% year-over-year in major SEA markets last year, and it’s not slowing down.

But fruit tea has a problem that milk tea doesn’t: the tea matters more. In a brown sugar milk tea, the syrup and creamer mask a lot. In a passion fruit jasmine tea, there’s nowhere to hide. If the jasmine base is bitter, the whole drink is bitter. If it’s weak, the fruit dominates and the tea becomes expensive flavored water.

The Problem with Manual Tea Brewing at Scale

The old way of brewing tea for a fruit tea shop goes like this: a large pot, a timer, a thermometer, and one person who knows what they’re doing. That person adjusts steep time based on the ambient temperature, the batch size, and how the tea leaves look that day. When they’re working, the tea is good. When they’re sick or quit, the shop’s tea quality takes a nosedive until someone else figures it out.

But fruit tea makes this worse than milk tea in two specific ways:

More tea types, more complexity. A typical fruit tea menu uses three to five different tea bases: jasmine green for citrus drinks, oolong or tieguanyin for stone fruit drinks, black tea for heavier fruit blends, and sometimes white tea or floral blends for premium items. Each tea base needs different temperature, different steep time, different leaf-to-water ratio. A person who’s good at brewing jasmine green might not have the same touch with oolong.

Temperature precision matters more. Green tea and jasmine tea are especially sensitive. Brew jasmine at 90°C instead of 80°C and you get bitterness that cuts right through fruit syrup. Brew at 75°C and you get weak tea that fruit flavor overwhelms. The window for good jasmine extraction is about 5°C wide. A manual brewer with a pot on a stove is lucky to stay within 10°C.

What an Intelligent Tea Brewer Actually Does
